At 6:00 if you press I to inset and then B, it will ignore insetting the border even with the mirror modifier, saving you some time on that step.

I think you should avoid using subdivision when making such low poly cars. The tutorial was super helpful in that it showed me some of your techniques, but I think the end-product of the cars looks a little bad due to subsurf. Having low poly models be blocky can be very charming and cute too, rounding edges isn't always better.
